The Story

Yuzu kosho is deeply regional — every household in Kyushu has its own recipe. Our producer is a retired fisherman who began making it for family use. Requests from neighbours and local restaurants turned a seasonal ritual into a small craft production.

About This Product

Made in Oita prefecture from fresh green yuzu zest, green chilli, and sea salt, fermented for a minimum of six months. The paste is citrus-sharp, grassy, and deeply aromatic — a few grams transforms grilled fish, hot pot, or plain rice.
